Greek Salad

2 cucumbers, peeled and diced
2 packages grape tomatoes, sliced in half
1/3 oz. mint
4-6 oz. feta cheese, crumbly
1-2 T olive oil

Mix together and serve.

This is an amazing salad. I'd never had feta cheese before, and I admit I was a little nervous to try it, and it was FANTASTIC. The feta cheese is salty, and the mint gives it an extra layer of flavor. If we ever are fortunate enough to be invited to Rae's house again for dinner, I hope to have this again! :-)
